I need to document my bread making adventures is this... someday I'm going to perfect my bread making skills. When that day comes, all my kids might remember is yummy homemade bread. And this is the proof that I have had to work long and hard so that my bread is free of warts (see that huge bulgie of air) and actually poofs taller than my finger. I decided to try a different recipe to see if I was the problem or the recipe. Yep - I think it might be my skills. Actually can I blame it on my big pans? I'm going to get some smaller ones and see if I have more success. Keep on swimming... keep on swimming.

Is your yeast new? It doesn't seem like your bread rised very much.
I've made bread that looks like that, it is discouraging, but don't let it get the better of you.
Even though it's new yeast, you need to test it to make sure it's active. In a bowl mix 1 tablespoon yeast, 1/2 cup fairly warm water, and 1 teaspoon sugar and stir just a little. If in 5 or 10 minutes your yeast mix hasn't risen a little your yeast isn't active. I once bought a new package of yeast and it never did work.
A really good brand of yeast is SAF, again, you might have to go to the Bosch store, or some such place to find it.
Another question is, do you have a mixer that you use or are you making bread by hand? Kneading makes a big difference and I never could knead it well enough by hand to get a good bread.
My mom used to make bread almost weekly. I love to make rolls, though I don't attempt bread too often. But--is your yeast quick rise or just normal? When you use normal yeast (at least on my roll recipe) you have to let it raise for 1 1/2 hours, then punch it down, then let it rise for another half hour. Then, shape it, then let it rise AGAIN! Lots of time. But, I have noticed with my rolls that the longer I let them rise, the better they turn out. I also knead them by hand for a long time! If you want, I would love to make some bread together. My kids LOOOOOVE to help me make rolls (their own...)
Jenni and Brittany both gave perfect advice. I buy my SAF instant yeast at Costco. Really cheap. That is by far the best yeast to use. I had problems with my bread too all the time until I started using that yeast.
Ditto to Marne's comment. I use SAF yeast and its the best. I could never get my bread to work out before buying it. And I use a Bosch mixer only mixing for 5minutes. And smaller pans might really work. Good luck!
Your friends sure seem like they know what they are doing when it comes to cooking. Sorry about your bread. Homemade bread takes a lot of time and energy, but it is yummy!
